摘要
研究了紫苏色素在不同浓度的乙醇-水溶液体系中的吸收光谱和色差的变化规律。紫苏色素在乙醇-水溶液中的吸收光谱和色调均随乙醇浓度的变化而变化。随着乙醇浓度的增加，紫苏色素的最大吸收波长和吸光度均增大，色调向紫红色变化。
The absorption spectrum, color tone and the stability Of perilla Color in the ethano - water systems were studied. As the concentration of ethanol inceased, the max absorption wavelength of the solutions of Perilla Color increased.The color tone of Perilla Color became purple red when the concentration of ethanol increaed, and the stability of the Perilla Color decreaed when the the concentration of ethanol and the temperature increaed.
