摘要 果实采后的品质劣变和生理衰老是限制果实贮藏保鲜的重要因素,探明果实采后品质和生理变化规律对于贮藏保鲜技术的研究开发尤其重要。介绍了果实采后品质成分如色素物质、香气物质、硬度、糖、酸、可溶性固形物、Vc和水分等的变化情况,综述了果实采后呼吸、乙烯和活性氧代谢的研究进展,并提出了未来的研究方向。 The quality deterioration and physiological senescence of postharvest fruit were the restrict factors of storage.It was important that clearing the regularity of quality and physiological changes of postharvest fruit for the development of storage technology.The changes of quality components such as pigment substance,aroma substance,hardness,sugar,acid,soluble solids,Vc and water of postharvest fruit were introduced.The research advances on respiratory,ethylene metabolism and active oxygen metabolism were reviewed.The research directions in the future were put forward.
