摘要
开发了方便面中的丙烯酰胺的测定方法。试样以C3-丙烯酰胺为内标,经水溶液振荡提取,采用HPLC-MS/MS方法,以多选择反应监测(MRM)模式测定目标化合物。方法的检出限和定量限分别为10、30μg/kg,回收率为71·5%~119·5%,RSD为7·1%~8·1%。本方法定量准确、可靠,适用于测定方便面中的丙烯酰胺。
A method for determination of acrylamide in instant noodles was developed.The sample was extracted by water,and chemical solvents mixture was used for clean-up.Acrylamide was determined by HPLC-MS/MS using 13C3 labeled acrylamide as internal standard.The limit of detection (LOD)and limit of quantification(LQQ) were 10 and 30μg/kg,respectively.The recovery efficiency of the extraction procedure was with 71.5%- 119.5%, and RSD were within 7.1%-8.1% .The results showed that the method was suitable for determination of acrylamide in instant noodles
