摘要
采用模糊识别法和氨基酸比值系数法,分别对以鸡蛋蛋白质为标准,以WHO/FAO氨基酸参考模式为评价标准,对鱼尾葵蛋白质营养价值进行了全面评价。结果表明,鱼尾葵蛋白质的贴近度为0.377,氨基酸比值系数分为9.27,鱼尾葵作为蛋白质的食物来源是缺乏科学性的。但可考虑鱼尾葵在谷氨酸单项开发方面具有较高价值。
Using the egg protein as standard protein and WHO/FAO reference model of essential amino acid as an appraisal criterion, the authors evaluated the protein nutritional value of C.ochianclra Hance by the method of fuzzy discernment and method of ration coefficient of amino acid respectively. The results showed that the degree of closeness of C.ochianclra Hance was 0.377, its score of ratio coefficient of amino acid was 9.27. It was unscientific to consider the protein of C.ochianclra Hance as a good source of the albumen for food. But it was worthwhile to consider the monomial development ofGlu ofC.oehianelra Hance.
