摘要
为研究红酵母细胞中多糖的化学组成及抗氧化性和对增强哺乳动物、水产鱼类的免疫活性的影响。以红酵母菌为材料,通过化学抽提法得到多糖,经蒽酮比色法测得其中葡萄糖为0.012%,蔗糖为0.013%;经凯氏定氮法分析,蛋白质为3.2%,该多糖为蛋白多糖;经氨基酸分析表明含有多种氨基酸,其中天冬氨酸含量最多;由邻苯三酚自氧化法检测发现该多糖能够抑制邻苯三酚自氧化,具有抗氧化能力。
Analysis of chemical components and effect of antioxidation of polysaccharides from Rhodotorula was studied in the paper. Effects of the extraction on immune system of mammal and aquatic fish were also reviewed. Components of polysaccharide extracted from Rhodotorula with chemical method were glucose: 0.012%, sugar: 0.013% and protein: 3.2%. The polysaccharide also contains protein. Different amino acids were found in the complex and aspartic acid was the most among amino acids. The polysaccharide could inhibit self-oxidation pyrogallol, which indicated that the polysaccharide has antioxidant capacity.
