摘要
瓜尔胶提取自瓜尔豆种子的内胚乳,主要成分为半乳甘露聚糖,是重要的增稠剂、乳化剂、稳定剂、絮凝剂,在食品、采油、日化、医药等领域有着广泛的应用。为深入开展瓜尔胶在相关应用领域的科学研究,对其国内外的最新进展进行介绍,主要包括瓜尔胶的精制纯化、理化性能、改性工艺研究及与其它胶体的复配交联和最新应用情况。
Guar gum is a natural water-soluble Cyamposis tetragonolobus, its main component polysaccharide obtained from the endosperm of the legume is galactomannan, which is the most significant natural thickeners, emulsion stabilizers, gelling agents and flocculating agent. Guar gum and its derivatives have been widely used in food production, oil exploitation, daily chemicals and pharmaceutica manufacture . For the propose of the scientific investigation in the future, the lately research results about guar gum, including its purification, physical and chemical characteristics, modification and synergistic crosslinking with other hydrocolloids as well as newly applications in production were summarized in the present paper.
