摘要
食品安全问题受到世界范围内的广泛关注,在中国也屡屡发生。微生物污染是威胁食品安全和人体健康的重要因素之一。介绍了常见的三类微生物污染,即细菌性污染、真菌性污染和病毒性污染,其中细菌性污染是最常见的一类食品污染。有必要系统研究食品的微生物污染,以保障人们健康和社会和谐发展。
Food safety is a global problem, also occurring frequently in China. Microbial contamination is one of the major factors threatening food safety and human health. Three types of microbial contamination are reviewed, i.e., bacterial contamination, fungal contamination and virus contamination. Among them, bacterial contamination is most common. It's necessary to systematically study microbial contamination to guarantee human health and social harmonious development.
