番茄红素是一种类胡萝卜素,具有抗氧化、抗癌、预防心血管疾病等功效。本文简述了西瓜果实中番茄红素的性质、作用、生物合成、影响因素、测定方法及其制取和应用。
Lycopene is a kind of natural carotenoids, and has become a hot topic in recent studies because of its important role in the prevention of certain diseases such as cancer and cardiovascular disease. The authors reviewed the quality, biosynthesis, function, determination, production and application of lycopene in watermelon.
