摘要
对鼠尾藻的主要营养成分以及氨基酸、无机元素等进行了分析,并与马尾藻、海带、紫菜等进行了比较。结果表明,鼠尾藻的蛋白质含量较高,粗脂肪含量较低,灰分较少。鼠尾藻含有的氨基酸较全面,呈味氨基酸丰富,氨基酸评分高于甘紫菜,且限制性氨基酸与FAO模式相同。鼠尾藻同时还含有丰富的无机元素,其中钾、钠、钙的含量均较高。
The main nutrient component, amino acid and inorganic element of Sargassum thunbergii were analyzed. In Sargassum thunbergii, the contents of protein are high and the contents of lipid and ash were low. Its composition of amino acid was comprehensive and the chemical score of essential amino acid was higher than Porphra. Its contents of inorganic element, especially K, Na and Ca were quite high.
