大肠菌群检测技术研究进展 被引量:6

摘要 大肠菌群是指一群能发酵乳糖、产酸、产气、需氧和兼性厌氧的革兰氏阴性无芽孢杆菌,包括埃希氏菌属(大肠杆菌)、肺炎克雷伯菌属、柠檬酸杆菌属和肠杆菌属。多年来,国内外都以大肠菌群作为食品、水体污染的常用指示菌之一,并评价和判断食品被粪便污染的程度和有无肠道致病菌污染的可能。肠道病原体是最为常见的污染食品、水体的病原微生物,动物(包括人类)的排泄物是其主要来源。
