Quality Determination of Ruilianna Apple in Different Maturation Stages

摘要 [目的]为了研究不同成熟期对高酸苹果经济性状的影响,为适时采收提供理论依据。[方法]在常温下,对不同成熟期高酸苹果瑞连娜果实的外观品质、内在品质及贮藏特性进行了研究。[结果]近成熟期1个月瑞连娜果实生长是一个持续增加的过程,日平均增重1.40 g,且10月5-10日有一个快速跃变期。果实生长后期横径生长速率高于纵径。随着成熟度的提高,果皮颜色由深变浅,果面光洁度由略粗糙变为极平滑,VC含量逐渐降低,日平均降低0.03%。随采摘期的延后,果实总酸含量逐渐降低,固酸比逐渐增大,果实在常温下贮藏相同时间后的腐烂率逐渐升高。[结论]在滨州地区瑞连娜果实最适宜采摘期是10月10-15日,采收的果实最利于贮运,最适宜加工果汁的采摘期为10月15-20日,最佳食用的采摘期为10月20-25日。 [Objective] The research aimed to investigate the effect of different maturation stages on the economical traits of high-acld apple in order to provide the theoretical basis for timely harvesting. [Method] Under room tenperature, the appearance quality, the inherent quality and the storage characteristics of high-acid apple Ruilianna fruit were studied during different maturation stages. [Result] In one month of the premature stage, the growth of Ruilianna fruit was a continuously increased process with an average daily weight of 1.40 g, and had a rapid junking stage during the 5th - 10th of October. The growth rate of fruit transverse diameter was higher than that of longitudinal diameter in the late growth stage. With the enhancement of maturity degree, the pericarp color was changed from deep to light, the surface smooth finish was changed from slightly coarse to extremely smooth, and the VC content was decreased gradually, with the average daily VC content reducing by 0.03%. With the picking period delayed, total acid content of fruit was decreased gradually, the ratio of soluble solids content to total acid was increased gradually, and the decay rate of huits that were stored for the same time at room tempenrature was gradually enhanced. [Conclusion] The optimum picking period for Ruilianna fruit in Binzhou region was the 10th - 15th of October, which was the most propitious to the reservation and transportation of the picked fruits. The optimum picking period for fruit juice processing was the 15th - 20th of October and the best picking period for edible use was the 20th - 25th of October.
