中碳链脂肪酸甘油三酯是一种天然油脂的改性产品,综述了中碳链脂肪酸甘油三酯的定义、来源、理化性质及代谢特点,介绍了国内外对其性质、应用、制备及其安全性等方面的最新研究进展,并对用椰子油制备中碳链脂肪酸甘油三酯的前景进行了展望。
Medium chain triglycerides is functional lipids. This paper described the medium chain triglycerides, and discuss the character of physic, chemical and physiological function. It also introduced its application, synthesis and the edible safety of medium-chain triglycerides.
