This paper introduces some new techniques for fruit and vegetable fresh-keeping adopted at home and abroad such as the fresh-keeping with vacuum storage, the fresh-keeping with ionized radiation storage, the fresh-keeping with antistaling agent treatment, the fresh-keeping with intercellular water structuring and air-conditioning, the fresh-keeping with critical low-temperature and high-moisture, the fresh-keeping with high-voltage electrostatic field, and the fresh-keeping with biological technique, etc.
