摘要
茶多酚是一种新型的天然抗氧化剂,对茶多酚的功能及其作用机理进行了综述,并指出目前茶多酚产品存在的不足,以及解决这些问题的前人研究成果和存在的缺陷,同时介绍了微胶囊技术的特点及其在茶多酚产品中的应用,并且提出了具有一定研究价值的建议。
The tea polyphenols is a new kind of natural antioxidant. In this paper, the functions of tea polyphenols and its effective mechanisms are summarized. The limits of tea polyphenols are analysised, and methods for resolving these limits, microencapsulation technology and its applications in tea polyphenols and some valuable research suggestions are also introduced.
