摘要
综述了保护剂的保护机理及其在乳酸菌冻干过程中应用现状,比较了各种保护剂的作用,提出复配保护剂的研究仍应作为今后研究重点。
This paper summarized the protection mechanism of protectants and their applications in the process of LAB freeze-drying, compared the functions of protestants, put forward that the research emphases was on recombination protectants in the future.
