摘要
臭氧是一种强氧化剂,具有广谱、高效的杀菌作用.综述了臭氧在果蔬贮藏中对果蔬品质、果蔬采后生理及果实防腐等方面的影响.
Ozone is a strong oxidizing agent that has been effectively used to control growth of microorganism. Effects of ozone treatment on storage of fruits and vegetables are reviewed in this paper, which include influences of ozone to fruits and vegetables qualities, roles of ozone in fruits and vegetables postharvest physiologies, and influences of ozone to fruits and vegetables anticorrosiom.
