摘要
本文介绍了辣椒果实中辣椒素类物质的化学组成、结构和理化性质,综述了近年来国内外辣椒碱的提取、纯化、定量检测方法以及用途。
Chemical constitutions, structures and its physical and chemical properties of capsaicin in hot peppers are described in the paper. And methods for capsaicin's abstract, purification and its utilization studies at home and abroad in recent years are also overviewed.
