双孢蘑菇涂膜保鲜技术研究 被引量:17

摘要 以提高贮藏质量延长保鲜期为目的,探讨了双孢蘑菇的最适贮温,采用海藻酸钠、琼脂和魔芋涂膜液等对双孢蘑菇进行涂膜及优化.结果表明:双孢蘑菇的最适贮温0~3℃,采用涂膜法可延缓褐变进程,保鲜质量好;在相同条件下,双孢蘑菇采用海藻酸钠涂膜的保鲜效果最好.海藻酸钠涂膜双孢蘑菇的最佳条件为海藻酸钠用量0.8g/100g水、蔗糖酯用量0.7g/100g水、涂膜时间4min. To improve the quality of fresh-keeping Agaricus bisporus ,optimum storage temperature was studied ,sodium alginate, agar and glucomannan were used to coat Agaricus bisporus prior to storage for this study. An orthogonal experiment was carried out to investigate the effects. The result showed that the optimum storage temperature of Agaricus bisporus was 0-3℃,and Agaricus bisporus coating with functional food gum had good quality, the color deterioration and loss of nutrition were decreased obviously during storage. Under the same viscosity of food gums, sodium alginate coating produced the best result. The optimum conditions are as follows: the concentration of sodium alginate is 0.8%, the concentration of sugar ester is 0,7%, coating time is 4 min.
