摘要
目的 分析猪骨肽中氨基酸的含量。方法 猪骨肽经 6N的盐酸水解 ,随后用日立 85 0 -Ⅱ型自动氨基酸分析仪分析。结果 猪骨肽中 17种天然氨基酸的含量 (W/W ,g % )分别为 :Asp 5 83,Thr 1 85 ,Ser 2 0 4 ,Glu 10 5 9,Gly 9 6 9,Ala 5 2 2 ,Cys 0 4 3,Val 2 6 3,Met 0 75 ,Ile 1 73,Leu 3 87,Tyr 0 97,Phe 1 79,Lys 4 33,His 1 4 6 ,Arg 4 78,Pro6 2 9。结论 猪骨肽中含有丰富的多种天然氨基酸 ,其中Glu、Gly、Pro、Asp、Ala、Arg、Lys、Leu等 8种氨基酸是猪骨肽中存在的主要氨基酸。
Objective To analyze the content of amino acid in bone peptides of pig (BPP).Methods BPP was hydrolyzed in 6N of HCI.Then it was analyzed with AutomaticAmino Acid Analyzer (850-Ⅱ Model, Made in Japan).Results The contents (w/w;g%)of 17 kinds of natural amino acids in BPP were: Asp5.83, Thr 1.85, Ser 2.04, Glu 10.59,Gly 9.69, Ala 5.22. Cys 0.43, Val 2.63, Met 0.75, lie 1.73, Leu 3.87, Tyr 0.97, Phc1.79, Lys 4.33, His 1.46, Arg 4.78, Pro 6.29.Conclusion There are many kinds of amino acid in BPP. Main amino acids in BPP are Glu, Gly,Pro. Asp, Aim Arg, Lys.
