摘要
采用以水代替有毒有机溶剂的乳化法合成蔗糖酯，对产品的酸性、羟基值、酯化度、ＨＬＢ值、单酯含量进行了分析测定，从理论上探讨了反应机理及实现反应的条件．所合成的蔗糖酯的ＨＬＢ值在１４．８～１６．１之间，具有乳化、润湿、增溶和去污作用．
Sucrose esters are prepared by emulsion. Water is used as solvent instead of toxicant organic solvent. The AV Hydroxyl value, ester value, HLB,and mono-ester of the products are analyzed,and the reaction mechanism and factors are discussed theoretically. The HLB of the products is between 14. 6￣16.1.
