摘要
浙江省现有小麦品种的籽粒品质普遍较差,表现为蛋白质含量和面筋含量低,面团形成特性不良,不适合烘烤优质面包,这在很大程度上与生态条件有关,但某些品质性状可通过育种得到改良.文中提出了当前品质育种的目标以及提高品质育种效果的对策。
The wheat cultivars planted now in Zhejiang Province have undesirable grain quality, mainly showing
lower protein and gluten content, inferior properity of dough formation, so it is imposible to bake good-quality
bread with that flour. Although ecological condition in Zhejiang accounts for most reason why quality of
wheat grain is not good, some characters related to grain quality can be improved by breeding. The goals of
quality breeding and strategy for raising efficiency in breeding are suggested in this paper.
