摘要
2001—2002年对杭州市居民日常食用的七大类13种市售蔬菜硝酸盐含量进行了测定。结果表明,硝酸盐在不同蔬菜中的积累顺序为:绿叶菜类>根菜类>白菜类>甘蓝类>豆类>茄果类>瓜类。并以硝酸盐日允许摄入量(ADI)值为基础,对这些蔬菜作出质量评价。
The content of nitrate in 13 kinds of vegetables available in Hangzhou market was detected in 2001-2002. Results were shown that the accumulation of nitrate in vegetables was in the following order: leaf vegetables > root vegetables > Chinese cabbages > cabbages > legumes > egg plants > gourds. The quality of vegetables and influence of nitrate on health were evaluated based on the ADI value.
