杂交稻谷加工损失的物性因素分析

摘要 本文作者就国产杂交稻谷和常规稻谷的物性对加工损失的影响进行了探讨。在本研究的稻谷品种测试范围内 ,杂交稻谷加工损失大于常规稻谷的主要原因是 :一、杂交稻谷的粒型属于细长型 ,在砻谷、碾米加工过程中因挤压、剪切、弯矩的作用 ,容易破碎造成加工损失 ;二、杂交稻谷粒的成熟期不一 ,不饱满、不完善颗粒较多 ,造成出糙率低 ,加工损失大。而腹白率、硬度等其它因素对加工损失的影响有待探讨。 We investigated the influences of the physical properties of the hybrid and ordinary rice on the paddy loss. Within the range of the rice breeds tested, we found the reasons for the larger paddy loss of the hybrid rice than the ordinary one. First, the hybrid rice is longer and thinner. It is much easier to be lost during husking and milling because of extrusion, cutting and moment. Second, the hybrid rice has many properties such as the inconsistence of mature time and lack of chubbiness and integrity which made the brown rice rate lower and the loss bigger. But the influences of some other factors such as white belly rate and rigidity still need to be investigated.
