摘要
食用香味物质是化学结构明确的物质,来自化学合成或得自动植物。通常它们不直接用于消费。食用香精由食用香味物质、天然香味复合物(如精油)和非香味的食品成分(食材和食品添加剂)组成,用于食品加香。食用香精配方按使用情况而变,食用香精的安全性取决于其全部组分的安全性。如果食用香精的全部组分均符合法规要求,则其安全性是有保证的。本文对食用香料香精的安全性和国内外相关法规标准进行了回顾和论述,并提出了如何完善我国食用香料香精法规标准体系。
