摘要
植物脂肪氧合酶能专一催化具有 cis,cis-1,4-戊二烯结构的多元不饱和脂肪酸,通过分子加氧,形成具有共扼双键的氢过氧化衍生物。其分子结构中含有非血红素铁,在催化过程中起关键作用。脂肪氧合酶会影响植物的生理变化。应用外源脂肪氧合酶催化反应的研究已从水溶液体系发展到有机溶剂体系,并发现添加物对反应结果产生一定影响。酶促反应的产物氢过氧化物可作为药物合成或化学合成的中间体,在食品工业中可用于产生风味物质。总结了对脂肪氧合酶固定化的方法,并展望了今后的研究方向。
Plant lipoxygenase can catalyze the oxidation of polyunsaturated fatty acids containing the cis, cis-1,4-pentadi-ene moiety to the corresponding hydroperoxides of conjugated (trans, cis)-dienes. There occurs a nonheme iron atom within thelipoxygenase molecule, which is considered as the key in enzymatic reaction. It also affects the physiology of plants. Research onthe catalytic reaction with exogenous lipoxygenase has developed from the aqueous system to the organic solvent system. Differentadditives have a certain effect on the enzymatic catalysis. Hydroperoxides can be the intermediates of pharmaceutical or chemicalsynthesis, and produce flavor compounds in the food industry. Immobilization methods of lipoxygenase are summarized and thepreview of future research is made.
