摘要
优化番茄番茄中可溶性膳食纤维(SDC)的提取工艺,采用水提醇沉的方法,以正交实验优化番茄中SDC的提取工艺。得到最佳工艺条件为:提取溶剂水用量40mL/g,乙醇与提取液体积比为4∶1,提取时间30min,浸取温度60℃时产率最高。在此条件下提取产率达到20.3%。结果表明,番茄膳食纤维按照此工艺提取的SDC含量较高。
In order to optimization the progress of soluble dietary cellulose(SDC),the methods of aqueous extraction and ethanol deposition were applied through orthogonal design.The optimum conditions were as follows:the proportion of crude material and water was 1∶40,ethanol and the extracted fluid was 4∶1 under the extraction temperature of 60℃ and the extraction time of 30 min.The results showed that the yield ratio could reach to 20.3%,which proved that the SDC containing in tomato was fairly high.
