宜昌毛尖香气品质特点分析

Analysis of the aroma quality characteristics of Yichang Maojian

摘要 采用顶空固相微萃取结合气相色谱-质谱联用技术,结合感官审评和内含物质含量测定,鉴定分析5种宜昌毛尖的香气组分,初步探讨了宜昌毛尖的香气品质特点。结果表明,宜昌毛尖香气以清香为主要特点,部分带花香。GC-MS分析结果表明,香气物质相对含量最高的为醇类(5个样品中的平均相对含量为56.47%),其次为烯类(12.23%)、其他类(10.44%)、酮类(9.58%)、醛类(5.87%),含量最少的是酯类(4.67%)。可见对宜昌毛尖香气起主要作用的是醇类、烯类和其他类化合物。 The headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry was used to identify and analyse the aroma components of five Yichang Maojian by combining with sensory evaluation and determination of the content of inclusions,and the characteristics of the aroma quality of Yichang Maojian were initially explored.The results showed that the aroma of Yichang Maojian was mainly characterised by clear aroma,partly with floral aroma.The results of GC-MS analysis showed that the highest relative content of aroma substances were alcohols(average relative content of 56.47%in five samples),followed by alkenes(12.23%),others(10.44%),ketones(9.58%),aldehydes(5.87%),and the lowest content was lipids(4.67%).It could be seen that the main role in the aroma of Yichang Maojian was alcohols,alkenes and other compounds.
