摘要
目的了解漳州市水产品及其制品中海洋生物毒素分布情况,为保障食品安全,促进养殖业高质量发展提供依据。方法漳州市2018—2023年通过出海捕捞、养殖场抽样、农贸市场购买、中毒事件样品及事发地周边采购等方式采集贻贝等双壳贝类、织纹螺等螺类和泥螺等软体动物类样品297份;养殖河豚鱼及同池养殖水产、非加工鱼干140份。用超高效液相色谱串联三重四极杆质谱(UPLC-MS/MS)分别对16种麻痹性/腹泻性贝类毒素和河豚毒素进行分析。结果漳州市监测结果,各毒素常规监测中检出率较低,2018年度牡蛎和扇贝PSP的检出率23.1%;样品中毒素含量处于较低水平(其他年份未检出),不同亚型毒力因子转化为STX的毒性当量浓度,均值为31.0μg STXeq/kg,远低于GB 5009.213—2016的限值(800μg STXeq/kg)。结论漳州市水产品及其制品中海洋生物毒素本底水平较低,食用安全性较高,但食用赤潮暴发期或非季节性捕捞的水产品,仍有较高的中毒风险。
Objective To analyze the distribution of marine biotoxins in aquatic products and their products in Zhangzhou City,and to provide a basis for ensuring food safety and promoting the high-quality development of aquaculture industry.Methods From 2018 to 2023,a total of 297 samples of bivalve shellfish such as mussels,conchs such as Nassarius and mud snails;and 140 samples of farmed puffer fish and aquatic products cultured in the same pool,as well as non-processed dried fish were collected in Zhangzhou City through various methods,including offshore fishing,sampling from aquaculture farms,purchasing from farmers'markets,and collecting from poisoning incidents.Ultra-high-performance liquid chromatography tandem triple quadrupole mass spectrometry(UPLC-MS/MS)was used to analyze 16 types of paralytic/diarrhetic shellfish poisoning and tetrodotoxin.Results The monitoring results in Zhangzhou City showed a low detection rate of various toxins.In 2018,the detection rate of paralytic shellfish poisoning(PSP)in oysters and clams was 23.1%.The toxin content in the samples was at a low level(not detected in other years).The toxic equivalent concentration converted from different subtypes of virulence factors to STX had an average value of 31.0μg STXeq/kg,which was far below the limit value of GB 5009.213-2016(800μg STXeq/kg).Conclusion The background level of marine biotoxins in aquatic products and their products in Zhangzhou City was relatively low,indicating a high level of edible safety.However,there is still a high risk of poisoning when consuming aquatic products during red tide outbreaks or non-seasonal fishing.
