基于线性规划的老年人群杂粮代餐粉的配方设计

摘要 目前老龄化已成为人们广泛关注的话题,随着年龄的增长,老年人慢性病的患病率也随之增加。杂粮是兼备食疗功能的优质食材,可有效预防一些老年慢性疾病的发生。代餐粉方便即食、易于消化吸收。因此,非常有必要研发一款营养均衡、适宜于老年人群食用的杂粮代餐粉。以小米、黄豆、大麦为主要原料,并辅以燕麦、紫薯、荞麦、麸皮,以人体膳食营养成分适宜摄入量作为主要约束条件,以模糊数学感官评分为指标,通过线性规划法对杂粮代餐粉进行配方设计,得到最佳配方为小米101.50 g、黄豆104.46 g、大麦100.61 g、燕麦10.00 g、紫薯9.00 g、荞麦8.00 g、麸皮7.00 g,并配入营养强化剂维生素B_(2)0.01 mg、维生素C 33.30 mg、碳酸钙54.93 mg、氯化钠1148.86 mg、富硒酵母9.56 mg。依此配方制得的杂粮代餐粉色泽均匀、口感与风味俱佳、冲调性较佳,营养均衡,符合老年人膳食的高蛋白、易于消化吸收的要求。期望为杂粮代餐粉以及老年人食品的研发提供基础数据及有益参考。 Currently,aging has become a topic of widespread concern.With the increase of age,the prevalence of chronic diseases in the elderly also in creases.Multigrain is a kind of high-quality food with both dietary and therapeutic function,which can effectively prevent the occurrence of some chronic diseases in the elderly.Meal replacement powder is convenient to eat,easy to digest and absorb.Therefore,it is of great significance to develop a kind of multigrain meal replacement powder with balanced nutrition for the elderly population in this study.The formula of multigrain meal replacement powder for the elderly population was designed with millet,soybean and barley as the main raw materials,and with oats,purple potato,buckwheat and bran as the supplemented.The formula design was based on linear programming,with the adequate intake(AI)of human dietary nutrients as the main constraint condition and fuzzy mathematical sensory score as the index.The optimal formula was millet 101.50 g,soybean 104.46 g,barley 100.61 g,oats 10.00 g,purple potato 9.00 g,buckwheat 8.00 g and bran 7.00 g,with nutrient fortifying agent V_(B2)0.01 mg,V_(C)33.30 mg,calcium carbonate 54.93 mg,sodium chloride 1148.86 mg and selenium-rich yeast 9.56 mg.It was found that the multigrain meal replacement powder prepared according to the above formula was of uniform color,excellent flavor and taste,good blending ability,and balanced nutrition.Moreover,the powder was formulated,which meets the requirements of high protein,and easy digestion and absorption in the diet of the elderly.It is expected to provide basic data and some benefit references for the development of new meal replacement powder and food for the aged.
