微信健康教育对餐饮从业人员食品安全知识、态度和行为的干预效果评价 被引量:12

Intervention effect of WeChat health education on knowledge,attitude and practice of food safety among catering service employees

摘要 目的评价微信健康教育对餐饮从业人员食品安全知识、态度、行为的干预效果。方法餐饮从业人员按文化程度分层随机分组,382人和380人分别作为实验组和对照组。实验组由微信进行食品安全健康教育,对照组由传统方式进行健康教育。比较干预前后两组食品安全知识、态度、行为的差异。结果干预后,实验组对食品污染类型、食品经营者贮存食品要求等10个食品安全知识项目的知晓率分别为87.96%、86.13%、89.79%、90.31%、93.72%、96.86%、91.10%、81.15%、83.77%和95.29%,均高于对照组的82.89%、74.21%、84.47%、83.68%、87.63%、92.63%、86.05%、71.58%、76.58%和89.47%(P<0.05);实验组对从业人员定期体检、上岗前熟悉食品安全知识等4项食品安全态度的得分分别为(4.13±0.72)分、(4.25±0.69)分、(4.30±0.64)分和(4.29±0.67)分,均高于对照组的(3.84±0.72)分、(3.94±0.75)分、(3.91±0.73)分和(3.94±0.67)分(P<0.05),实验组在制作熟食前做到四勤、打喷嚏避开食物等5项食品安全行为的形成率分别为92.33%、92.86%、98.41%、97.62%和91.53%,均高于对照组的86.06%、88.20%、95.98%、94.37%和85.52%(P<0.05)。结论利用微信开展食品安全健康教育更能提高餐饮从业人员食品安全知识,强化其态度,规范其行为。 Objective To evaluate the effect of WeChat health education intervention on knowledge attitude and practice(KAP)of food safety in catering service employees.Methods 382 and 380 catering service employees were selected as the experimental group and the control group by stratified random sampling method according to educational level.The experimental group was taken with health education on food safety through WeChat,the control group was taken with traditional methods of health education,such as leaflets,posters and so on.The differences of KAP of food safety were compared between two groups before and after intervention.Results After intervention,the awareness rates of food safety knowledge in the experimental group were 87.96%,86.13%,89.79%,90.31%,93.72%,96.86%,91.10%,81.15%,83.77%,95.29%,which were higher than those in the control group(82.89%,74.21%,84.47%,83.68%,87.63%,92.63%,86.05%,71.58%,76.58%and 89.47%,P<0.05).The Likert scores of the experimental group on the attitudes towards food safety were(4.13±0.72),(4.25±0.69),(4.30±0.64),(4.29±0.67),which were all higher than those of the control group(3.84±0.72,3.94±0.75,3.91±0.73,3.94±0.67,P<0.05).The formation rates of food safety behaviors in the experimental group were 92.33%,92.86%,98.41%,97.62%,91.53%,which were all higher than those in the control group(86.06%,88.20%,95.98%,94.37%,85.52%,P<0.05).Conclusion Food safety health education in WeChat can effectively improve the knowledge of food safety in catering staffs,strengthen their attitudes and regulate the behavior of food safety.
