几种食糖制备中清净工艺的探讨 被引量:1

摘要 蔗汁清净的传统方法有二步法、碳酸法和亚硫酸法,国外企业多采用二步法,但其成本高昂,不适于推广,国内大多采用较为经济的亚硫酸法清净蔗汁。随着科研的深入及技术的发展,在传统生产方法的基础上涌现出许多新型清净工艺,在一定程度上改善了传统方法的缺点,增强了对蔗汁的清净效果。蔗汁的清净工艺方法不同,其生产出的糖品色值与杂质含量也会有所不同,本文将横向对比探讨几种不同的蔗汁清净工艺方法,并针对不同工艺方法生产出来的食糖杂质含量进行纵向分析,为国内制糖厂的发展及创新方向提供理论参考。 The traditional methods of sucrose impurity removal include two-step method,carbonic acid method and sulfite method.Foreign enterprises mostly adopt two-step method,but its cost is high and it is not suitable for popularization.Most domestic enterprises tend to use the more economical sulfite method.With the deepening of scientific research and the development of technology,on the basis of the traditional production methods,many new and better impurity removal processes have emerged,which have overcome the shortcomings of the traditional methods to a certain extent and enhanced the purification techniques.Different color values and impurity contents of sugar products comes along with different methods of sucrose impurity removal.In this paper,several different methods of sucrose impurity removal are compared and discussed,the effects of different processing methods on the impurity content of sucrose were analyzed in order to provide theoretical reference for the development and innovation of domestic sugar factories.
